The continuous improvement in good practices and implementation of hazard analysis and critical control points (HACCP) remains very crucial for food hygiene quality safety to steadily thrive in the agro-food product industry sector. To improve the agro-food product quality, the dependency of quality management (QM) on such key facets as quality assurance (QA), control, improvement, and planning appears to be on the rise. Herein, how food hygiene quality safety standards and their associated processes have been assured is described. To understand the relevance of QM in the (abovementioned) processes, we discuss some ethical quality considerations, food quality safety standards, HACCP fundamentals/implementation, QA control systems, other quality standards associated with agro-food industry, together with supplementary essentials associated with quality. Through the combined efforts of HACCP and QA control points (QACP) such as improved food hygiene, both quality, and safety levels can be further enhanced and sustained. Establishing the QM system within a given agrofood product enterprise is not the real deal, what matters most is how to maintain and sustain it. Some challenges encountered during the auditing/ implementation processes of food safety management systems, as well as directions for future studies, involving QM, QA, and food hygiene quality safety, are presented.

Local food production is meaningful not only for a single producer but also for the consumer, and finally for the entire region. Therefore, it would be beneficial to take up the issue of local entrepreneurship in the context of food production. The aim of the study was to analyze important terms, research topics, and research results related to the issue of local entrepreneurship in the context of food production. Literature review revealed definitional discrepancies related to the subject of the study. Thus, the need to create an unambiguous definition of local food and local entrepreneurship was emphasized. Own definitions of these issues were provided. Most of the available publications are devoted to local food produced in selected countries. In the analyzed research papers, the problem of local food is most often correlated with marketing or health-promoting properties of local food. A research gap was identified: suggestions were made in regards to the research problems worth bringing up in empirical research in the interest of activating local entrepreneurship.

Agricultural food industry in Thailand generated incomes about 10.5% gross domestic product (GDP) of the country in 2015. The demands of agricultural food products around the world has been increased for years. Agricultural food products from Thailand could not be exported as many as the growth of market demands because of the limitation of food safety guarantees. Analysis and Critical Control Points (HACCP) is a minimal requirement for exported food products to assure food safety. Not all Thai companies in agricultural food industry received HACCP certifications. There might be some challenges that obstructed the implementation of HACCP in the food industry of Thailand. The objective of this research was to identify challenges faced by companies in Thailand when implementing the HACCP in agricultural food companies. An online survey was conducted to collect data from companies in food industry. Twenty companies completed the survey. All twelve challenges proposed in the research survey were experienced by participating companies during the HACCP implementation. The challenges, identified as barriers to implement HACCP, were a lack of employee engagement in HACCP implementation, a lack of employees who understand the HACCP system, and a lack of advanced statistical knowledge. The results suggested companies to develop an effective communication plan to convey the HACCP implementation plan to employees at all levels and to provide training programs, related to HACCP and statistics, to fulfill knowledge and skills required in the HACCP implementation.
