In Mexico, the state of Jalisco produces 17% of the total milk production, of that percentage 60% comes from the Los Altos region (López and García, 2010), this is where it is believed that the traditional drink known as “pajarete”. Pajarete is prepared with freshly milked milk, chocolate, sugar and cane alcohol. Vanilla, marzipan and coffee can be added according to the consumer's taste. The consumption of this traditional drink has increased to such levels that every year in May the Pajarete Festival is celebrated in Tlajomulco, Jalisco, however there is strong opposition from some health sectors to this practice. This article aims to review both positions.
