“…To accomplish this task, very promising achievements could be reached by evaluating the enzymatic activities excreting by particular LAB strain in the fermentation medium and based on the obtained results adjust the deficient activities of commercial enzymes. Economical evaluation of costs of the fermentative LA production showed that the operational costs that consist of raw materials, fermentation, electrodialysis, and hydrolysis costs contribute about 77% of the total costs (Juodeikiene et al, 2015). Thus, the combination of enzymatic pretreatment with selected acid tolerant antimicrobial organisms evolving enzyme systems appears to be promising for increasing the economical efficiency of fermentative LA production.…”

“…Since its discovery, lactic acid is mainly produced by fermentation (in the form of calcium lactate), commercially exploited by the Avery Lactate Company (USA) in 1881 , . Although there are chemical production routes, they remain unused as they are more costly than present biochemical methods . Moreover, up to now, chemical routes only provide racemic mixtures, which is a major downfall for the synthesis of polylactic acid requiring maximum chiral purity or regarding its use in the food industry .…”

“…The production through fermentation is preferred because, among other advantages, the lactic acid can be produced from renewable substrates such as starchy materials (Juodeikiene et al 2015), lignocellulosic biomass (Abdel-Rahman et al 2011), food waste (Tang et al 2016), glycerol (Murakami et al 2016), microalgae (Vanthoor-Koopmans et al 2013), and sugarcane molasses . Sugarcane molasses is a potential raw material for lactic acid production.…”
