Currently, gastronomy is a fundamental element for tourists to discover the culture and traditions of a destination. The transcendence granted to a culinary experience in a specific place can become a fundamental motivation for the visit and determine the level of satisfaction reached. In this research, the relationship between tourism and gastronomy is analysed in the city of Popayán, Colombia, a city that has received recognition from UNESCO as a Creative City of Gastronomy. To do this, we examine the influence of different dimensions of culinary motivation in the satisfaction with gastronomy that is experienced during the visit. In addition, we analyse the role of tourist attitude towards culinary experience in gastronomy satisfaction. The methodology used in this research is based on partial least squares structural equation modelling. The main results indicate that the importance of the culinary experience of the tourist in the choice of the destination mediates the effect that culinary motivations exercise on the satisfaction with the gastronomy.

Creative tourism is a novel segment of the tourism market that may turn into a great opportunity for small cities to attract visitors. Thus, it can be a possible economic and social driver for local development. Despite its potentiality, not much empirical research has been conducted to explore the specific strengths and weaknesses of developing creative tourism in small cities, probably due to the lack of reliable data. Our study aims to fill this gap by using the C3 Index, a composite indicator developed by the Joint Research Center-European Commission, as the data source, and the bootstrap method as a statistical tool to detect significant differences between small and large cities. Our findings reveal that the smallest cities show positive features to foster creative tourism (e.g., they have at least as good cultural infrastructures and cultural participation as the largest cities). However, in some other aspects, small cities still have room to improve (e.g., improvements in local and international connections or further development of the cultural and creative sector).

The aim of this investigation is to identify the relationship which can be found in the literature between creative tourism and local development, using a bibliometric inventory made in scientific databases (Academia.edu, Econlit, Google Scholar, CAPES Journals, Redalyc, Scielo.org, SCOPUS, and Web of Science, among others) as research method. In general, it was possible to verify that there is a concern of the authors of the papers analysed in establishing a link between creative tourism and local/regional development, without, however, going very far on this relationship, or, at least, when it came to identifying the impacts of economic, cultural, social and environmental nature. This being said, it seems to be relevant that future research takes a deeper look at the hypothesised relationship between the proposals of creative tourism and the benefits it can bring to local communities.
