Genome-scale metabolic model for Lactococcus lactis MG1363 and its application to the analysis of flavor formation

Abstract: Lactococcus lactis subsp. cremoris MG1363 is a paradigm strain for lactococci used in industrial dairy fermentations. However, despite of its importance for process development, no genome-scale metabolic model has been reported thus far. Moreover, current models for other lactococci only focus on growth and sugar degradation. A metabolic model that includes nitrogen metabolism and flavor-forming pathways is instrumental for the understanding and designing new industrial applications of these lactic acid bacter… Show more

“…We used an implemented task in PySCeS CBMPy to guarantee mass and charge balance. We further tested the genome-scale model for the presence of loops, as reported for the genome-scale model of L. lactis (8). The model was annotated and exported as SBML level 3 (22) and will be publicly available in BIOMODLES and SysMO SEEK and is additionally provided as a spread sheet in the appendix (see Table SA1 in the supplemental material).…”

“…We used 11 manually curated, published gut microbe reconstructions (23,(26)(27)(28)(29)(30)(31)(32)(33) that we had refined previously (24). The reconstructed strains are listed in Table S1 in the supplemental material, and the reconstructions are shown in spreadsheet format in Table S2 in the supplemental material.…”
