Preparation and Characterization of Licorice-Chitosan Coatings for Postharvest Treatment of Fresh Strawberries

Several plant extracts are being investigated to produce edible coatings, mainly due to their antioxidant and antimicrobial activities. In this study, licorice root extracts were produced by ultrasound-assisted extraction and were combined with chitosan to elaborate edible coatings. Different solvents and temperatures were used in the extraction process, and the antioxidant and antimicrobial activity of the extracts were assessed. The most bioactive extracts were selected for the development of the edible coatings. The rheological properties of the coatings were studied, and they were applied on strawberry to evaluate their physicochemical and microbiological properties. The addition of licorice extract to chitosan resulted in positive effects on the rheological properties of the coatings: the incorporation of phytochemicals to chitosan decreased the shear stress and improved the restructuring ability of the coating solutions. The films presented a reduction of the Burger model parameter, indicating a reduction of rigidity. Furthermore, the strawberry coated with chitosan and licorice extract maintained good quality parameters during storage and showed the best microbiological preservation in comparison with controls. Hence, the use of chitosan with licorice extract is a potential strategy to produce edible coating for improving the postharvest quality of fruits.

Рост населения мира и проблема нехватки продовольствия и кормов требуют развития технологий в области пищевой промышленности и кормопроизводства, повышающих эффективность использования вторичных возобновляемых ресурсов, а именно целлюлозосодержащих отходов сельского хозяйства и перерабатывающей промышленности. Культивирование высших грибов для получения пищевого и кормового белка и биологически активных соединений является наиболее рациональным способом переработки лигноцеллюлозных отходов растениеводства. Использование плодовых тел высших грибов способно в значительной мере сократить потребность в производстве мяса и обеспечить население высококачественным и ценным продуктом питания. Однако присутствие в целлюлозосодержащем сырье разнообразных плесневых грибов тормозит развитие высших грибов, требует энергоемкой предварительной подготовки субстрата и сдерживает развитие данной отрасли. Использование микроорганизмов, обладающих целлюлолитической активностью и антагонизмом в отношении плесневых грибов, является перспективным решением проблемы. В данном исследовании было выделено 49 изолятов целлюлолитических бактерий из пшеничной, овсяной и ячменной соломы, а также разрушенной древесины. Показана наибольшая эффективность выделения целлюлолитических микроорганизмов из длительно хранящихся образцов пшеничной соломы. Среди изолятов с наиболее высокой целлюлолитической активностью и коллекционных культур микроорганизмов отобраны антагонисты выделенных ранее из соломы микромицетов, относящихся к родам Penicillium, Aspergillus, Fusarium. Также определена антагонистическая активность выделенных микроорганизмов к одному из основных возбудителей зеленой плесени высших грибов Trichoderma longibrachiatum. Отобрано 8 изолятов с наиболее выраженной целлюлолитической активностью и антагонизмом в отношении микромицетов - засорителей вторичного целлюлозосодержащего сырья. Отобранные микроорганизмы будут использованы в дальнейшей работе по разработке способа комплексного использования лигноцеллюлозных отходов в культивировании высших грибов для пищевой промышленности, сельского хозяйства, медицины и фармацевтики. The growth of the world's population and the problem of food and feed shortages require the development of technologies in the field of food and feed production, which increase the efficiency of the use of secondary renewable resources, namely cellulose-containing waste from agriculture and the processing industry. The cultivation of mushrooms to obtain food and feed protein and biologically active compounds is the most rational way to process lignocellulosic crop waste. The use of mushroom fruiting bodies can significantly reduce the need for meat production and provide the population with a high-quality and valuable food product. However, the presence of various mold fungi in cellulose-containing raw materials inhibits the development of higher fungi, requires energy-intensive preliminary preparation of the substrate, and hinders the development of this industry. The use of microorganisms with cellulolytic activity and antagonism against molds is a promising solution to the problem. In this study, 49 isolates of cellulolytic bacteria were isolated from wheat, oat and barley straw, as well as degraded wood. The highest efficiency of isolation of cellulolytic microorganisms from long-term stored samples of wheat straw has been shown. Among isolates with the highest cellulolytic activity and collection cultures of microorganisms, antagonists of micromycetes previously isolated from straw belonging to the genera Penicillium, Aspergillus, and Fusarium were selected. The antagonistic activity of the isolated microorganisms to one of the main mushroom pathogens Trichoderma longibrachiatum was also determined. Eight isolates with the most pronounced cellulolytic activity and antagonism against micromycetes spoiling secondary cellulose-containing raw materials were selected. The selected microorganisms will be used in further work on the development of a method for the integrated use of lignocellulosic waste in the cultivation of higher fungi for the food industry, agriculture, medicine and pharmaceuticals.

Вторичное лигноцеллюлозное сырье является самым крупномасштабным возобновляемым ресурсом на планете. Пожнивные остатки, в частности солома злаковых культур, повсеместно сжигаются, создавая угрозу экологии. Одним из способов использования вторичного лигноцеллюлозного сырья является культивирование высших грибов. Однако энергоемкость термической предобработки субстрата для выращивания грибов ограничивает их производство. В данной работе выделено 23 изолята плесневых грибов, засоряющих пшеничную, ячменную и овсяную солому. Выделено 2 штамма гриба Trichoderma longibrahiatum, являющегося патогеном высших целлюлозоразрушающих грибов. Изолировано два штамма Pleurotus ostreatus для дальнейшей работы по защите субстрата для культивирования с помощью микроорганизмов антагонистов. Lignocellulosic secondary raw materials are the largest renewable resource on the planet. Crop residues, in particular cereals straws, are burned everywhere, creating a threat to the environment. One of the ways to use secondary lignocellulosic crop waste is the cultivation of higher fungi. However, the energy intensity of the thermal pretreatment of the substrate for growing mushrooms limits their production. This work identified 23 isolates of mold fungi that spoil wheat, barley, and oat straws. Two strains of the fungus Trichoderma longibrahiatum, a cellulose-destroying edible mushroom pathogen, have been isolated. Two strains of Pleurotus ostreatus were selected for further work on protecting the substrate for cultivation with antagonistic microorganisms.
