Frying Oil Evaluation by a Portable Sensor Based on Dielectric Constant Measurement

Abstract: A portable capacitive sensor was designed to assess frying oil degradation by measuring the changes in electrical capacitance. An interdigital electrode (IDE) was designed to be implemented as the testing probe (as IDEs are resistive to parasitic capacitance), together with an adjacent capacitive chip Pcap01 and a further microprocessor STM32, which were used as the data-processing elements. Experimental results demonstrated that viscosity could be a useful frying oil quality indicator, and also proved a preli… Show more

“…Therefore, the readout circuit is selected with a size of 7.5pF, and the capacitance precision error is less than 0.05pF. In addition to the reference capacitance being a necessary design consideration, it is also important to note that the parasitic capacitance at the micro-capacitance input is as small as possible and that the line between the measured capacitance and the input port of the reference capacitance distance detection chip needs to be short enough [12].…”

“…Fendri et al, in 2019, presented an interdigital capacitive sensor for frying oil quality assessment and the results have shown a very good correlation (R 2 = 0.97) with reference methods [13]. A similar approach was used by Liu et al, in 2019, who developed a portable sensor system based on an STM32 microcontroller (ST Microelectronics) for frying oil quality measurement [14]. Electrochemical sensing can also be implemented by means of biosensors, where a bio-receptor is immobilized on the electrode to allow specific detection.…”

“…Peroxide is the principal result of oil chemical breakdown and contributes to nonvolatile polar molecules (PC) [ 12 – 14 ]. A capacitive sensor can be used to assess polar chemicals in oil [ 15 , 16 ]. Oil permittivity is defined as the ratio of capacitance in oil to that in air and can be used as a quality indicator [ 17 ].…”
