Free sugar, amino acid, and beta-glucan content in Lentinula edodes strains collected from different areas

Abstract: In this study, we analyzed the nutrient composition and β-glucan content in Lentinula edodes fruiting bodies from different collection areas. Four types of free sugars were detected by HPLC, and the range of trehalose prevalence was 0.83% to 9%.
