Free fruit at workplace intervention increases total fruit intake: a validation study using 24 h dietary recall and urinary flavonoid excretion

Abstract: Background/Objectives: To validate 24 h dietary recall of fruit intake by measuring the total 24 h excretion of 10 different flavonoids in 24 h urine during an intervention with free fruit at workplaces. Subjects/Methods: Employees at workplaces offering a free-fruit program, consisting of daily free and easy access to fresh fruit, and controls employees at workplaces with no free-fruit program were enrolled in this validation study (n ¼ 103). “…Possible biomarkers of general FV intake include carotenoids and vitamin C in plasma as well as urinary flavonoids (8). Reported correlations with different dietary assessment methods in healthy adults are mainly in the range of r = 0.3-0.4 for total urinary flavonoids (38)(39)(40) and 0.2-0.4 for total plasma or serum carotenoids (39,(41)(42)(43). For the correlation between plasma vitamin C and FV intake, a wide range (r = 0.3-0.6) is reported in the literature (43)(44)(45).…”

“…Di dalam hati, benzena epoksida merupakan senyawa yang tidak stabil dan akan segera mengalami perubahan membentuk fenol yang akan dikeluarkan melalui urin. Oleh karena itu kadar fenol digunakan sebagai indicator biologic atas paparan benzena pada tenaga kerja (Sugiharto, 2009;Krogholm, 2010).…”
