“…As we know, the isoelectric point of OVA falls in the range of 4.59–4.71, around which OVA could easily form particle by protein aggregation. In pH 3 condition, OVA play a great role in self-aggregation showing positive charge and have electrostatic interaction with negative CKGM ( Nallamuthu et al, 2021 ).
