O presente trabalho teve como objetivo avaliar a qualidade microbiológica e físico-química do camarão espigão (Xiphopenaeus kroyeri) in natura e defumado, procedente da região do Pontal do Peba, Alagoas. Foram determinados os teores de umidade, cinzas, cloretos e pH do camarão nas formas in natura e beneficiada, efetuando-se as contagens de S. coagulase (+) (UFC/g), Salmonella sp. (UFC/g) e de coliformes a 45°C (NMP/g). Os resultados obtidos nas análises físico-químicas para o camarão in natura e beneficiado foram, respectivamente, umidade de 77,87% e 40,32%, cinzas de 1,73% e 14,03%; cloretos 0,81 e 10,58. Conclui-se que o beneficiamento favoreceu alterações significativas (p<0,01) no camarão. O pH do camarão in natura (7.3) mostrou-se estatisticamente semelhante ao encontrado no defumado (7.37). Duas amostras foram consideradas impróprias microbiologicamente, devido à elevada contagem de S. coagulase (+), revelando a importância de maior controle na produção e comercialização desse produto. Torna-se necessário, então, a definição de critérios e padrões físico-químicos para a elaboração de camarão defumado e melhoria nas condições higiênicas de sua manipulação.

While beer provides a very stable microbiological environment, a few niche microorganisms are capable of growth in malt, wort and beer. Growth of mycotoxin‐producing fungi during malting, production of off‐flavours and development of turbidity in the packaged product due to the growth and metabolic activity of wild yeasts, certain lactic acid bacteria (LAB) and anaerobic Gram negative bacteria, impact negatively on beer quality. It follows that any means by which microbial contamination can be reduced or controlled would be of great economic interest to the brewing industry and would serve the public interest. There has been an increasing effort to develop novel approaches to minimal processing, such as the exploitation of inhibitory components natural to raw materials, to enhance the microbiological stability of beer. LAB species, which occur as part of the natural barley microbiota, persist during malting and mashing, and can play a positive role in the beer‐manufacturing process by their contribution to wort bioacidification or the elimination of undesirable microorganisms. Other naturally occurring components of beer that have been valued for their preservative properties are hop compounds. It may be possible to enhance the antimicrobial activities of these compounds during brewing. Some yeast strains produce and excrete extracellular toxins called zymocins, which are lethal to sensitive yeast strains. Yeast strains resistant to zymocins have been constructed. Imparting zymocinogenic activity to brewing yeast would offer a defence against wild yeasts in the brewery. Thus, the antimicrobial properties of naturally occurring components of raw materials can be exploited to enhance the microbial stability of beer.

Screening of lactic acid bacteria from vacuum packaged beef for antimicrobial activity

The objective of this study was to isolate lactic acid bacteria (LAB) from vacuum packaged beef and to investigate their antagonist activity. LAB mean counts of 5.19 log cfu/cm 2 were obtained from five samples of vacuum packaged beef. Two hundred isolates were selected and screened for the inhibitory effect on five ATCC reference Lactobacillus strains. Thirty six isolates showed activity in the agar spot test against at least two of the indicator strains. However, only six cell free supernatants (CFS) from these isolates exhibited activity against the indicator strains using the well-diffusion test and conditions that eliminated the effects of organic acids and hydrogen peroxide. L. acidophilus was the most sensitive indicator tested, whereas L. plantarum and L. fermentum were the most resistant ones. Identification by MIDI system indicated that these LAB isolates were Lactococcus lactis subsp. cremoris, Pediococcus acidilactici, Lactobacillus delbrueckii subsp. bulgaricus and Lactobacillus casei GC subgroup A. The antagonistic factors produced by most of these LAB against L. acidophilus were resistant to heat treatment (100ºC for 10 min) and stable over a wide pH range (4.0 to 9.0). These data suggest that these isolates could be used as promising hurdles aiming increased safety and extended shelf life of meat products.
