Filling America's Fiber Intake Gap: Summary of a Roundtable to Probe Realistic Solutions with a Focus on Grain-Based Foods,

Abstract: Current fiber intakes are alarmingly low, with long-term implications for public health related to risk of coronary heart disease, stroke, hypertension, certain gastrointestinal disorders, obesity, and the continuum of metabolic dysfunctions including prediabetes and type 2 diabetes. Eating patterns high in certain fibers are known to lower LDL cholesterol and blood pressure, lower blood glucose, and decrease insulin resistance in people with prediabetes and type 2 diabetes; help with both weight loss and main… Show more

“…High intake of dietary fibres has been known to lower low density lipoprotein, the atherogenic marker, blood pressure, blood glucose, and improve insulin resistance in people with pre-diabetes and type 2 diabetes, and improve bowel regularity and gastrointestinal health [Clemens et al, 2012]. Date--pits extract showed reduction in blood glucose level in induced type I diabetics mellitus rats as compared to the group without extracts.…”

“…To determine syneresis, 100 mL of drinkable yogurt was placed in a graduated cylinder and stored at 5 • C for 28 days. At different times (7,14,21, and 28 days) of storage, the volume of whey was measured. The results were expressed in percentage (%) and were measured as mL of whey per 100 mL initial sample [28].…”

“…Other countries also ingest well below the recommended amounts. Meeting the dietary fiber requirement with common foods means that the correct number of whole grain and fruit and vegetable servings are needed along with nuts and legumes as recommended by the USDA's MyPlate (52,53). Recommendations by the Dietary Guidelines Advisory Committee to adopt a Dietary Approaches to Stop Hypertension or Mediterranean Eating Pattern or align diets according to MyPlate along with the judicious use of added fibers can address the fiber gap and improve overall nutriture.…”
