Fungi are microorganisms of significant biotechnological importance due to their ability to provide food and produce several value‐added secondary metabolites and enzymes. Its products move billions of dollars in the pharmaceutical, cosmetics, and additives sectors. These microorganisms also play a notable role in bionanotechnology, leading to the production of hybrid biological‐inorganic materials (such as cyborg cells) and the use of their enzyme complex in the biosynthesis of nanoparticles. In this sense, optimizing the fungal growth process is necessary, with selecting the cultivation medium as one of the essential factors for the microorganism to reach its maximum metabolic expression. The culture medium's composition can also impact the nanomaterial's stability and prevent the incorporation of nanoparticles into fungal cells. Therefore, our main objectives are the following: (1) compile and discuss the most commonly employed culture media for the production of fungal secondary metabolites and the formation of cyborg cells, accompanied by preparation methods; (2) provide a six‐step guide to investigating the fungal metabolomic profile and (3) discuss the main procedures of microbial cultivation to produce fungal cyborg cells.

SummaryMeat has historically been an essential source of animal‐based protein. However, due to population growth, health problems linked to the consumption of red meat, and concerns over environmental challenges, there is an increased need for alternative protein sources. Various plant‐based meat alternatives have recently been explored, with ongoing advancements in industrial‐scale production. Mycoprotein has been proposed as a sustainable alternative to meat due to its distinctive functional food properties and fibrous structure. However, some challenges still prevail related to large‐scale production, texture, sustainability, and acceptability of mycoprotein products. This review paper provides a comprehensive overview of scientific research on mycoprotein, focusing on nutritional composition, functional properties, production technology, and health benefits. This study also examines the current challenges related to product safety, environmental impact, and prospects of this innovative food.

Underutilized co‐ and by‐products are upgraded into materials with functional properties. The utilization of mushroom farming residues is investigated, specifically mushroom residues and spent mushroom substrate – whose chemical composition is determined – to produce cosmetic face masks, packaging films, and oil sorbents. Flexible mushroom sheets exhibit conformability and antioxidant activity between 82 and 94%, and better tensile strength in comparison with commercial cosmetic masks, making them suitable for such applications. Plasticization with glycerol increases the flexibility and tensile strain from ≈1 to 45% and moisture sorption from 32 to 100 wt.%. Spent mushroom substrate pulp yields stiff and strong rigid sheets with Young's moduli of 5 GPa and tensile strengths of 42 MPa. These sheets show 100% antioxidant activity, having hydrophobic behavior and oxygen barrier properties in dry conditions, and thus are promising for bioactive packaging applications. Foamed spent mushroom substrate sorbents demonstrate high affinity for both oil and water, with a water and oil uptake of 21 and 28 times their weight, respectively, while maintaining structural integrity. These properties make the foams viable as bio‐based oil sorbents, highlighting the potential of by‐products for advanced functional materials.
