Objective: To assess and compare the fatty acid composition of edible seeds and a nut native to the Cerrado (Brazilian savannah) to that of traditional oilseeds. Methods: Baru almonds, Cerrado cashew nuts, and pequi almonds were extracted from the fruits using appropriate equipment. All edible seeds and nuts were roasted, except for the Brazil nut. The sample lipids were extracted via cold pressing. The fatty acids were esterified, and the fatty acid esters were analyzed by gas chromatography. Results: The native and traditional edible seeds and nuts contain mostly monounsaturated fatty acids (42.72 g to 63.44 g/100 g), except for the Brazil nut, which showed predominance of polyunsaturated fatty acids (45.48 g/100 g). Pequi almond had the highest saturated fatty acid content (36.14 g/100 g). The fatty acids with the highest concentration were oleic and linoleic acids, and palmitic acid was also found in considerable concentration in the oilseeds studied. The Cerrado cashew nut and the traditional cashew nut have similar fatty acid profiles. As for the ratio of ω-6 to ω-3, the baru almond showed the highest ratio, 9:1, which was the closest to the recommended intake of these fatty acids. Conclusion: The fatty acid profile of the edible seeds and nuts native to the cerrado is similar to those of traditional oilseeds. We suggest the inclusion of native oilseeds in the diet aiming at reducing the risk of cardiovascular disease, especially the baru almond and the cerrado cashew nut, due to the fact they have high ratio of monounsaturated fatty acids to saturated fatty acids.

ABSTRACT:In this study, we determined the levels of individual fatty acids in the whole chicken body, as well as dry matter, nitrogenic substances and fat in Cobb 500 and Ross 308 chickens after 40 days of fattening. The highest level of all fatty acids (FA), regardless of the hybrid combination and sex of the chickens, was determined for oleic/elaidic acid, followed by palmitic, linoleic/linolelaidic, palmitoleic and stearic acids. In Cobb 500 cocks, higher values (P ≤ 0.05; P ≤ 0.01) were found for all saturated fatty acids (SaFA) compared to hens. With the exception of γ-linoleic acid, the levels of n-6 FA measured in cocks were higher (P ≤ 0.01) than in hens and n-3 FA showed higher levels of eicosatrienoic (P ≤ 0.05) and docosapentaenoic acids (P ≤ 0.01). Ross 308 hens had higher levels of most SaFA, with differences for palmitic (P ≤ 0.01), myristic, heptadecanoic and stearic acids (P ≤ 0.05). Regarding monounsaturated fatty acids (MUFA), hens contained higher levels of myristoleic (P ≤ 0.05) and oleic/elaidic acids (P ≤ 0.01). Cocks showed higher levels of n-6 FA except for linoleic/linolelaidic and γ-linolenic acids; higher levels were found for cis-8,11,14-eicosatrienoic, docosatetraenoic (P ≤ 0.05) and arachidonic acids (P ≤ 0.01). With the exception of α-linolenic acid, n-3 FA levels were higher in cocks, with differences in the levels of cis-5,8,11,14,17-eico-sapentaenoic and docosapentaenoic acids (P ≤ 0.01). The results suggest possible directions for future research focused on the use of broiler chicken hybrids with more favourable proportions of n-6 FA and n-3 FA in fat and meat.

Food Sci., 31: 241-248.We analysed the fatty acid (FA) composition of plant and fish oil supplements available in the Czech Republic. Total lipid FA composition was analysed by gas chromatography. A total of 62 plant and 50 fish oil supplements were analysed. Their FA composition ranged widely. Linoleic acid was a dominant FA in soya lecithin (45-60%), evening primrose (65-75%), amaranth (20-50%), pumpkin seed (45-55%), and borage oil supplements (40%). α-Linolenic acid ranged between 2% and 8% in soya lecithin and from 0.2% to 1% in the majority of the other plant oil supplements. Saw palmetto oil supplements were rich in saturated FA (40-90%). γ-Linolenic acid was found in evening primrose and borage oil supplements (10-20%). Sea buckthorn oil composition varied according to the part of the plant used. The majority of fish oil supplements contained 12-23% of eicosapentaenoic and 7-17% of docosahexaenoic acids. Oil supplements may be beneficial for patients with metabolic disorders because of their FA as well as antioxidant and phytosterol content.
