“…DON can accumulate in cereals, as a mycotoxin that remains stable at 120°C and partially stable at 210°C, allowing it to persist for years in different environments ( Khaneghah et al, 2018 ). When present in food, DON can cause a range of symptoms in consumers and livestock, including vomiting, gastroenteritis, and immunosuppressive effects ( Chen et al, 2018 ; Sun et al, 2020 ). At the cellular and molecular level, DON binds to ribosomes, inhibits the synthesis of protein, RNA, and DNA, and also induces cell apoptosis ( Zhao et al, 2022 ; Zha et al, 2023 ).…”

“…It can be generally comprehended that the life of ozone in an aqueous medium decreases with an increase in pH, with a greater amount of organic matter, and lesser presence of carbonates. The aqueous form of O 3 has been utilized as a decontaminating agent in fruits and vegetables (Strano et al., 2021; Sun et al., 2020), disinfectant in wastewater treatment (Xia & Hu, 2019; Yang et al., 2019), degradation agent for pesticides (de Souza et al., 2018; Pandiselvam, Kaavya, et al., 2020; Wang et al., 2021; Xia & Hu, 2019; Yang et al., 2019), promoting structural modification in food matrices (Lima et al., 2020; Satmalawati et al., 2020b) and other miscellaneous applications. However, the comparatively lower instability of ozone dissolved in water has limited its widespread application as a commercial food‐processing technique.…”

“…Ozone can also degrade mycotoxins and relieve their toxicities. Sun et al [10] treated deoxynivalenol with aqueous ozone solution (80 mg/L) and found that 7 min of treatment degraded 83% of the toxin. Luo et al [11] reported that exposing aflatoxin B 1 -contaminated corn (moisture 13.47%) to 90 mg/L ozone for 40 min reduced the aflatoxin B 1 content by 88.1%.…”
