Factors Influencing Aflatoxin Contamination in Before and After Harvest Peanuts: A Review

Abstract: <p>Aflatoxin contamination of peanuts has been of worldwide concern since the 1960s. Aflatoxins are fungal secondary metabolites that have been associated with severe toxicological effects to human and animals, which can cause enormous economic loss to producers, handlers, processors and marketers of contaminated peanuts. Aflatoxin contamination of peanuts is unavoidable due to the varied factors in pre-harvest, harvesting, and post-harvest stages of peanuts. The review summarizes the factors influencing… Show more

“…Chemical detoxification is mostly limited to human food, but some compounds (e.g., ammonium, hydrated bentonite, magnetic carbon) can reduce aflatoxin concentration in the final product [36]. Finally, other practices such as crop drying, improved sanitation, controlled processing and storage conditions, significantly contribute to reduce aflatoxin accumulation [22,24,26,30,[37][38][39][40].…”

“…The results showed that the targeted gene was present in A. carbonarius but absent in A. niger. It has been suggested that AF biosynthesis is a complex pathway involving the pattern of positive-and negative-acting transcriptional regulatory factors affected by environmental and nutritional parameters [35,36]. Thus, AF production does not only depend on the presence of the gene involved in AFs production but also the environmental condition that favors the production of AFs.…”

“…Up until now, both aflatoxin detoxification and quality retention in treated products by any single method has not appeared . Although USS can eliminate AFB 1 in peanut, the effect of high temperature on oil quality in oilseeds should be carefully examined.…”
