Extraction of Crude Bromelain from Pineapple (<em>Ananas comosus</em> L.) Fruit Waste and it&rsquo;s <em>in vitro</em> Protein Digestibility

Abstract: Purpose:  Crude bromelain is abundant in pineapple fruit waste and is possible to use in shrimp farming.
