Explaining Unsaturated Fatty Acids (UFAs), Especially Polyunsaturated Fatty Acid (PUFA) Content in Subcutaneous Fat of Yaks of Different Sex by Differential Proteome Analysis

Abstract: Residents on the Tibetan Plateau intake a lot of yak subcutaneous fat by diet. Modern healthy diet ideas demand higher unsaturated fatty acids (UFAs), especially polyunsaturated fatty acid (PUFA) content in meat. Here, the gas chromatography (GC) and tandem mass tag (TMT) proteomic approaches were applied to explore the relationship between the proteomic differences and UFA and PUFA content in the subcutaneous fat of yaks with different sex. Compared with male yaks (MYs), the absolute contents of UFAs, monouns… Show more

“…Currently, underlying component content and profiling, many useful methods have been developed to identify proteins and peptides at the transcriptomic, peptidomic, or genomic level to analyze the active substances, reveal the quality markers in medicinal materials, and perform an overall quality evaluation through bioinformatics and validation [33][34][35][36]. Here, transcriptomics and tandem mass tag (TMT) proteomics were used to analyze differences and identify quality markers in protein components of toad venom from different regions.…”

“…Diacyl glyceryl transferase-2 (DGAT2) catalyzes the final reaction of TG synthesis using diacylglycerol and fatty acyl-CoA as substrates [ 30 ]. HACD3 catalyzes the dehydration of 3-hydroxy acyl-coA intermediates to trans—2, 3-dilute acyl-CoA, catalyzes the extended circulation of long-chain fatty acids, and promotes the transport and synthesis of unsaturated fatty acids (UFAs) [ 31 ]. Fatty acid desaturase 1 (FADS1), as a key enzyme in the metabolism of polyunsaturated fatty acids (PUFA), catalyzes di-high -y-linolenic acid (DGLA) into arachidonic acid (AA) [ 32 ].…”

“…Therefore, the diet determines the concentrations of fatty acids in adipose tissue. Some tests suggest a homogenous composition of fat throughout the body [ 29 ], however, Xiong et al [ 30 ] detected a higher content of PUFA in subcutaneous fat, which might explain why the superficial or subcutaneous fat is softer than the deeper fat. The difference in composition between subcutaneous, abdominal fat, and omental fat might indicate that the relations of these different adipose regions with lipolytic activity also differ.…”
