Fermented vegetable products play a significant role in various cuisines, and understanding the fermentation dynamics of lactic acid bacteria (LAB) strains is essential for optimizing their production and quality. Here, we sought to investigate the fermentation performance of five LAB strains isolated from Sichuan paocai as starters for paocai. Sensory evaluation revealed that the inoculation of radish paocai samples with LAB strains effectively improved the overall liking and sensory satisfaction of participants, increasing the scores to varying degrees in terms of taste, flavor, texture, and coloration. Lactiplantibacillus plantarum and Lacticaseibacillus rhamnosus exhibited a good salt resistance in radish juice and could grow in a medium containing 10% NaCl. Four indicator strains commonly found in contaminated paocai were effectively inhibited by fermented LAB broths, which improved the edibility and safe production of paocai. Compared to spontaneous fermentation (CK), radish paocai inoculated with LAB showed a significantly accelerated acid production rate, shortening the fermentation period by approximately two days. The contents of titratable total acids, organic acids, and free amino acids were higher in the inoculated samples and were enriched in the taste of radish paocai. The content of volatile organic compounds in the inoculated samples was higher than that in CK. Based on OPLS-DA analysis, 31 key indicators of paocai quality were screened and used to rank the fermentation performances of the five strains using the TOPSIS method; here, Lpb. plantarum and Lcb. rhamnosus achieved the highest scores. This study provides a reference for selecting LAB strains as efficient and secure fermentation starters to optimize paocai quality.

Preventing energy waste in residential and office buildings has emerged as a critical issue in both developed and developing countries over recent decades. The growing demand for oil and energy reserves has amplified the urgency of this concern. The deployment of building energy management systems (BEMSs) can lead to timely responses to changes in environmental conditions, the prevention of energy wastage, a reduction in CO2 emissions, and an increase in the longevity of building equipment. Despite the undeniable benefits of BEMSs, their market size remains small, creating challenges for providers in reaching potential customers. This research seeks to identify and prioritize the marketing strategies for BEMSs. A case study was conducted, employing the “Strengths, Weaknesses, Opportunities, and Threats” analysis as a tool for identifying marketing strategies related to BEMSs. This method resulted in the identification of 18 distinct marketing strategies. These strategies were subsequently prioritized using a novel fuzzy multicriteria decision‐making technique, VIkor‐topSIS, considering six specific criteria. The findings of the study suggested a hierarchical influence of six criteria on the BEMS market, arranged in the following order of significance: effectiveness, cost, attainability, complexity, timing, and popularity. Furthermore, the top three marketing strategies for BEMSs were found to be internet advertising strategies, discounts to consumers, and online sales. The analysis of the results has also offered valuable insights into the strengths and weaknesses of the studied BEMS provider, as well as the opportunities and threats present within the BEMS market.

Studi ini akan menunjukkan bahwa metode pengambilan keputusan AHP dan TOPSIS dapat digunakan secara bersama untuk menentukan suatu pilihan dari beberapa alternatif. Studi ini mengambil kasus pada pemilihan beberapa supplier bahan mentah yang dilakukan oleh PJT COLLECTION. Kriteria pemilihan dipilih langsung oleh owner menggunakan dasar 23 kriteria Dickson dan muncul 8 dari 23 kriteria yang terpilih yaitu kualitas, harga, Garansi and Kebijakan klaim, perilaku, lokasi, gaya berkomunikasi, kemampuan pengemasan dan impresi. Pengolahan data menggunakan software Microsoft Excel 2016 dan Expert Choice 11.0. Terdapat 3 supplier yang digunakan oleh PJT COLLECTION yaitu UD. Galaxy 21, Haji Kudhori dan Haji Wahab. Hasil penilaian dan perhitungan pada metode AHP memunculkan bobot prioritas pada setiap kriteria dengan urutan kriteria kualitas (0,1626), harga (0,2823), kemampuan pengemasan (0,0811), lokasi geografis (0,1884), gaya berkomunikasi (0,0759), perilaku (0,0689), impresi (0,0743)dan garansi dan kebijakan klaim (0,0661). Hasil olahan data dan perhitungan dengan metode TOPSIS menunjukkan nilai preferensi untuk tiap Supplier dengan urutan UD. Galaxy 21 (0,9746), Haji Kudhori (0,1087) dan Haji Wahab (0,0058).
