SummaryItalian hard cooked types of cheese, like Parmigiano Reggiano and Grana Padano, are characterised by positive nutritional qualities. In fact, they contain substances that have particular biological activities, and therefore they can be fully considered, according to the defi nition given by the European Unit, as 'functional' foods. This short review concisely describes these components and the benefi cial eff ects related to their activities. The description of the biologically active components has been organised in the following paragraphs: protein and peptides, fat and lipids, carbohydrates and prebiotics, probiotic bacteria, vitamins, mineral salts, and components of dairy products active in disease prevention. In particular, several known bioactive peptides were found in Parmigiano Reggiano cheese samples: for example, phosphopeptides, which are known for their mineral-binding capacity and vehiculation activity, peptides with immunomodulatory activity, and angiotensin-converting enzyme-inhibitory peptides with anti-hypertensive eff ects. Among lipids, the role of conjugated linoleic acid and other fatt y acids present in these cheese types was taken into consideration. The presence of oligosaccharides with prebiotic properties and probiotic bacteria was also described. Finally, particular emphasis was given to highly available calcium and its impact on bone health.

3Opioid like morphine and codeine are used for the management of pain, but are associated 4 with serious side-effects limiting their use. Wheat gluten proteins were assessed for the 5 presence of opioid peptides on the basis of tyrosine and proline within their sequence. Eleven 6 peptides were identified and occurrence of predicted sequences or their structural motifs were 7 analysed using BIOPEP database and ranked using PeptideRanker. Based on higher peptide 8 ranking, three sequences YPG, YYPG and YIPP were selected for determination of opioid 9 activity by cAMP assay against µ and κ opioid receptors. Three peptides inhibited the 10 production of cAMP to varied degree with EC 50 values of YPG, YYPG and YIPP were 5.3 11 mM, 1.5 mM and 2.9 mM for µ-opioid receptor, and 1.9 mM, 1.2 mM and 3.2 mM for κ-12 opioid receptor, respectively. The study showed that in silico approach can be used for the 13 prediction of opioid peptides from gluten. 14

Design and synthesis novel amide derivatives containing an 1,3,4‐oxadiazole moiety as potential antibacterial agents

To find new antibacterial agents, 25 novel amide derivatives containing an 1,3,4-oxadiazole moiety were designed and synthesized, and their antibacterial activity against Xanthomonas oryzae pv. oryzicola (Xoc) and Xanthomonas oryzae pv. oryzae (Xoo) were tested. Interestingly, all target compounds showed excellent antibacterial activities against Xoc and Xoo. The EC 50 values of compounds 1-25 against Xoc and Xoo were 1.2-4.0 mg/L and 0.5-2.3 mg/L, respectively, which were significantly superior to those of the thiodiazole copper (95.1 and 89.0 mg/L) and bismerthhibol (73.8 and 68.8 mg/L). For example, the EC 50 values of compound 16 against Xoc and Xoo were 1.7 and 0.5 mg/L, respectively. Meanwhile, the curative and protection activity of compound 16 against rice bacterial leaf blight were 42.4% and 42.1%, respectively, which were superior to the control of jiahuangxianjunzuo (34.1% and 32.6%) and thiodiazole copper (33.0% and 27.1%). In addition, compound 16 might suppress the cell growth of Xoo by inhibiting the production of extracellular polysaccharide, the formation of biofilm, changes the cell membrane permeability, and cell surface morphology.
