Evaluation of HMF levels in unbranded flower honeys in terms of food safety

Abstract: 5-hydroxymethylfurfural (HMF) is formed by reducing sugars in honey in acidic environments by the Maillard reaction and is known as a carcinogenic, mutagenic and genotoxic compound.
