Die Analytik von mrischen 0len wird heute vonviegend mittels gaschromatographischer 'h2nnungen durchgefikhrt. Aber selbst mtz der hohen Today analysis of essential oils is done predominantly by gaschmmatographic separations. But in spite of the high degree in the performance of separation, the obtained selectivity is not sufficient in certain cases to gain complete resolution of complex compositions of terpenes. On this occasion an HPLC-method done under optimum conditions for separation and using a selective detector is able to contribute to problem solving. "he polarimetric detection exhibits this desirable selectivity in a high degree, but it bears in contrast to the other commonly used principles of detection the disadvantage of relatively poor sensitivity. In this paper the obtainable precision in quantification should be examined above all for a compound that is found in relatively small concenhations as an aroma component in peppermint oil. EinfiihrungGrundlage der pharmazeutischen Anwendung eines itherischen 61s ist die physiologische Wirkung einzelner Komponenten. die sich zum Teil synergistisch ergiinzen. Daneben werden einzelne ole aufgrund ihrer Geruchs-und Geschmackseigenschaften auf pharmazeutischem Gebiet angewandt -Oft sind es die Untcmhiede in den Begleitkomponenten eines 6les. die eine abweichende physiologische Wirkung des Gesamtiiles erkliren. Aus diesen GrUnden miissen von einer Analysenmethode neben den Hauptkomponenten auch die Nebenkomponenten erfa6t werden konnen. Da sich fir diesen Zweck nur solche Verfahren eignen, die einzelne Bestandteile eines 6les erfassen, sind die Arureibuchvorschriften in diesem S h e als nicht ausreichend zu bezeichnen: es wird hier lediglich eine relativ geringe Spezifia dadurch emicht. da6 neben physikalischen und chemischen Kennzahlen allenfalls der Gehalt einer Hauptkomponente ermittelt wird. Auch die Dc wird im Arzneibuch nur zu qualitativen und semiquantitativen Bestimmungen der Hauptinhaltstoffe herangezogen'*2). Kiinstlich hergestellte und veflschte ole entspechen deshalb auch Mufig den Anforderungen des Arzneibuchs.Andererseits spielen wirtschaftliche Gesichtspunkte und die Einfachheit der DurchfUhrung im Zusammenhang mit der erreichten Reproduzierbarkeit, Genauigkeit und Selektivittlt eine grok Rolle bei der Beurteilung der Eignung einer bestimmten Methode.So hat man rnit Hilfe der l3C-NMR-und der IR-Spektroskopie (als stand-alone-Methoden eingesem) zwar bereits einige Ekfolge enielen k h~e n~.~) . man stii6t bei der IR-Spektroskopie aber auf Schwierigkeiten bei der Spektreninterpretation; zudem konnen Begleitstoffe mit einem Anteil 4% nur scbwer -in Abhiingigkeit von i h r Struktur teilweise gar nicht -erkannt werden, es sei denn, es kann mit entspr. Computerprogrammen gearbeitet werden. Brewing method‐dependent changes of volatile aroma constituents of green tea (Camellia sinensis L.)

The determination of optimal levels of green tea amount and brewing time would have a crucial role in the accumulation of desired aromatic volatile compounds to meet worldwide market demand. Aroma is the most important factor influencing tea consumers' choices along with taste, price, and brand. This study aims to determine how the brewing time and amount of green tea affect the aroma profile of green tea infusion. The effect of the amount of Turkish green tea (5–10 g) and brewing time (5–60 min) on aromatic volatile compounds was evaluated using solid‐phase microextraction (SPME) and gas chromatography–mass spectrometry (GC–MS) technique. The SPME/GC–MS analysis identified 57 components in the aroma profile of green tea infusions including 13 esters, 12 alkanes, 7 unknowns, 6 ketones, 3 alcohols, 2 terpenes, 2 terpenoids, 1 alkaloid, 1 phenolic compound, 1 lactone, 1 pyrazine, and 1 norisoprenoid. The green tea amount and brewing time had significant effects on the number of chemical compounds. A total of 42, 47, and 36 aromatic volatile compounds were determined by brewing 5, 7.5, and 10 g of green tea. The most abundant constituents in green tea infusions were phytone, 2‐decenal, lauric acid, unknown 1, methoxy‐1‐methylethyl pyrazine, α‐ionone, β‐ionone, and diethyl phthalate (DEP). With this study, the aroma structures of green tea infusion have been revealed for the first time depending on the brewing time and quantity.
