Enzymatic detoxification of gluten by germinating wheat proteases: Implications for new treatment of celiac disease

Abstract: Germinating wheat enzymes reduce the toxicity of wheat gliadin in vitro and ex vivo. Further studies are justified to develop an alternative therapy for celiac disease.
