Abstract: Antocianinas são pigmentos naturais responsáveis por uma variedade de cores observadas em frutos, flores e algumas folhas, caules e raízes de plantas. A quantidade de antocianinas extraída foi medida pelo método diferencial pH, comumente usado em amostras ou em produtos alimentícios.
