Plants are a good source of natural antioxidants and could provide protection against harmful free radicals. Phenolic compounds were found to be an important part of human diet and are considered as active principles in many medicinal and agricultural plants. Detailed information about health-promoting components of different soybean cultivars could lead to a better understanding and an increased consumption of this crop, including its use in functional foods. The objective of this study was to determine total phenolics, total tannins, total flavonoids and antioxidant capacity with different assays of five Serbian soybean cultivars (Merkur, Sava, Valjevka, Venera and Victoria) extracted with three different solvents (70% acetone, 70% ethanol and 70% methanol). Total phenolics varied among cultivars and among applied solvents. Antioxidant properties highly depended on a solvent used for extraction. Such results highlight an existing variability in soybean seeds and emphasise the need to evaluate diversity and to support conventional breeding programs to improve soybean nutritional value.

In this study, the flavonoid and isoflavone contents in four checks with seed coat colour altered from yellow to black were determined, and their antioxidant activity was measured. Three anthocyanins (delphinidin-3-Ob-D-glucoside, D3G; cyanidin-3-O-b-D-glucoside, C3G; and petunidin-3-O-b-D-glucoside, Pt3G) were detected in the four checks, while their controls (cvs. 'Danbaek' and 'Daepung') were not found. Among them, D-16 derived from cv. 'Danbaek' showed the highest anthocyanin contents. The isoflavone contents of all checks showed lower levels compared to their controls. Among six isoflavones, glycitein was only detected in DP-39. To analyse the radical scavenging activities among the four checks, we conducted DPPH, FRAP and UWLA assays. Significant differences in antioxidant activities were obtainable in the four checks, which contained significant differences in levels of anthocyanins and isoflavones. Based on these results, gamma irradiation may change the isoflavone and anthocyanin contents of soybean. Our four checks selected in this study may be useful for breeding soybean varieties to alter their nutritional values.

Pleurotus ostreatus mushrooms were blanched, milled into flour and incorporated into wheat flour at 5, 10 and 15%. These composite flours, together with composite breads developed from these formulations were evaluated for polyphenols, namely flavones and isoflavones. Wheat flour and wheat bread were used as control samples. Extraction of polyphenols was done using ethanol as a solvent and analyzed using gas chromatographmass spectrometry. It was not possible to make bread with 15% mushrooms. Quantities of different flavones and isoflavones evaluated increased significantly (p<0.05) with increasing supplementation of mushroom flour in wheat flour. Composite breads were also observed to have higher contents of flavones and iso flavones as compared to bread prepared from wheat flour only. Composite flour with 15% mushrooms had highest quantities of flavones and isoflavones while composite bread with 10% mushroom flour had significantly higher (p<0.05) levels of these compounds. Caffeic acid was the most abundant amongst all the flavones analyzed in wheat mushroom blends while genistein was the most abundant isoflavone. Flavones and isoflavones in human nutrition protect against oxidative stress and also provide medicinal properties such as antimicrobial, antiviral and anticancer benefits. Pleurotus mushrooms are a good source of these important compounds hence incorporating them in daily diet like bread would ensure constant supplementation for improved health and nutrition.
