(Khiewwijit, Temmink, Rijnaarts, & Keesman, 2015) Para este estudio se priorizo el producto chorizo campesino calibre 26, que presenta mayor participación en el mercado, con el 12.70% que equivale al 1,300 toneladas aproximadamente (Alimentos Carnicos S.A.S, 2016) .
