Abstract:To understand the role of microorganisms in nitrogen (N)‐containing compound changes during the processing of Yujiangsuan by autochthonous starter cultures, the GC‐TOF‐MS‐based metabolomics method was adopted to investigate the effects of Weissella cibaria and Lactobacillus plantarum.
