Electrochemical Simulation of the Oxidative Capsaicin Metabolism

Abstract: Capsaicin, primarily known as the pungent ingredient in hot peppers, is rapidly metabolized in the human body by enzymatic processes altering the pharmacological as well as toxicological properties.
