In very high gravity (VHG) ethanol fermentation, the rheological properties of native cassava significantly influence heat and mass transfer, mixing energy, and, thus, the yield of all steps. This study investigated the effect of cassava varieties and their harvest times on starch liquefaction, saccharification, and fermentation. The genotype correlation of the starch properties was revealed for the most suitable cassava varieties. First, the starch content, amylose content, total reducing sugar from liquefaction and saccharification, pasting properties, and ethanol yields of six cassava varieties (Huay Bong 60, Hanatee, Kasetsart 50, Pirun 1, Pirun 2, and Rayong 11) at 6‐, 9‐, 12‐, and 15‐month harvest times were evaluated. The amylose content increased significantly from the 6th to the 12th month but slightly decreased at the 15th month. It was observed that the starch content contributed to a more substantial influence on the change in peak viscosity than on the amylose content. Ethanol fermentation using Saccharomyces cerevisiae TISTR5606 showed that the Rayong 11 variety at the 15‐month harvest time provided the highest ethanol concentration of 104.7 ± 4.1 g L−1 and an ethanol yield of 0.4 ± 0.1 g ethanol g−1 reducing sugar, which corresponded to 74.5% of the theoretical yield.

Prized virgin olive oils are protected by the certification brands PDO (protected designation of origin) and PGI (protected geographical indication) introduced by European Union in 1992. These brands rely on a known geographical origin, olive varieties, and production methods. Because branded oils are relatively expensive for the consumer, they have been targeted by fraudulent practices, such as addition/substitution with low quality oils, or non‐conformity with the discipline of production. Food genomics is a discipline that, before the analysis of residual DNA in food, allows for the identification of species or varieties of raw materials in order to establish if a product complies or not with the label. After invention of product category rules (PCR) that allow for the amplification of a few and degraded DNA molecules, food genomics has been applied in the traceability of different foods. Olive oil represents a real challenge, due to its characteristics, including the difficulty of extracting DNA in sufficient amount and of quality for PCR. Several studies have reported methods of DNA extraction from virgin olive oil that have led to satisfactory analysis with PCR. This review is a perspective study in this direction. Practical Applications: Virgin olive oil production is an important sector of Mediterranean countries and methods for controlling their origin and quality are of great interest to producers and consumers. Food genomics may be an alternative or complementary platform to the traditional analytical methods based on the determination of chemical composition. In this review, the molecular tools to trace the varietal composition of virgin olive oil and to detect the adulterant oils from other botanical species are summarized.

The chloroplast mat-K region and rpL16 intron region were sequenced for 14 species of Schisandraceae, representing both genera Kadsura Kaempf. ex Juss. and Schisandra Michx, to discuss the phylogeny of this family. Analyses were performed both in separate and combined sequence data sets (including the rbc-L sequence), with Illicium angustispealum A. C. Smith as the out-group. The results showed that the Schisandraceae are monophyletic. In all the analyses, Schisandra propinqua var. chinensis Oliva and Schisandra plena A. C. Smith were nested within Kadsura, which implies that the genera Kadsura and Schisandra are closely related. They might have originated from a common ancestor, but then evolved via different routes. The result inferred from the combined data showed a greater resolution within Schisandra than those from the two separate data sets. High bootstrap values supported the monophyly of most subgenera according to Law's system (1996). A combination of morphological, anatomical, and chemical analyses indicates that S. chinensis and S. rubriflora may be the primitive taxa in Schisandra.
