Abstract: Resumo O doce brigadeiro é um produto de origem brasileira, muito apreciado independente de idade. Diante disso, foi desenvolvida a formulação de brigadeiro à base de batata-doce, com adições de colágeno, quinoa e aveia em pó, um produto inovador e funcional, de alto valor energético, pensando em uma dieta mais saudável, utilizando dois tipos diferentes de leite condensado (zero açúcar e de soja).
