Effects of Ultradisperse Humic Sapropel Suspension on Microbial Growth and Fermentation Parameters of Barley Distillate

Abstract: Barley and other cereal grains can be used in the production of ethanol. The quality and safety of the grains utilized have enormous effects on the overall yield and quality of the final product (ethanol). Therefore, the present paper seeks to elucidate the antimicrobial activities of ultradisperse humic sapropel suspensions (UDHSS) on barley, wort, fermentation, and the quality of the final product. A standard microbiological method was used to assess the biocidal activities. Physicochemical parameters and vo… Show more

“…Humic substances can be extracted from the soils, sapropel, peat, and other sediments with alkaline solutions [45]. After their extraction, they can be operationally fractionated into humic acids and fulvic acids based on their different water solubility, [46].…”

“…Indigenous brewers always leave the mash overnight to enhance gelatinization and cooling. After cooling (the next day), the mash would be brewed according to the following mashing program: 63 • C for 60 min, 75 • C for 90 min, and cooled to 30 • C [1,35,134,135]. The mash could then be poured in a millet stalk woven basket for filtration ( Figure 5).…”

“…The wort is boiled for 45 min, where bitter hops are added at the beginning of the boiling process. The wort is clarified by a whirlpool and allowed to cool down to 15 • C, the trub discarded [7,11,[93][94][95][96]. The wort is diluted to lower the gravity (Plato) when NABLAB is to be brewed.…”
