Effects of Dietary Fiber and Carbohydrate on Glucose and Lipoprotein Metabolism in Diabetic Patients

Abstract: Dietary recommendations for the treatment of diabetic patients issued by national and international diabetes associations consistently emphasize the need to increase carbohydrate consumption. However, these recommendations have been questioned on the basis of growing evidence that, in both insulin-dependent and non-insulin-dependent diabetic patients, a high-carbohydrate diet does not offer any advantage in terms of blood glucose and plasma lipid concentrations compared with a high-fat (mainly unsaturated) die… Show more

“…Among them, dietary fiber may be the most important factor. Dietary fiber is known to control blood glucose and lipid concentrations (28)(29)(30)(31)(32)(33)(34)(35). Whole grains rich in fiber have beneficial effects of lowering fasting insulin level and decreasing the risk of cardiac disease in diabetes and obese adults (32)(33)(34).…”

“…The crude fiber consisting of cellulose, lignin, and hemicelluloses increase significantly during germination process (Laxmi et al., 2015; Zheng et al., 2006) as the plant cells synthesize different cellular components. The increase in fiber is desirable because dietary fiber slows down glucose release from food (Riccardi & Rivellese, 1991) which could be beneficial for people with diabetes. Moreover, fiber forms gels in the stomach that slows down starch digestion and gastric emptying which subsequently increase satiety (Yu, Ke, Li, Zhang, & Fang, 2014).…”
