Abstract: The present study was focused primarily on the optimized extraction of dietary fiber (DF) from pineapple peel (PP) waste using alkaline and combined alkaline ultrasound methods and it was used with antioxidant rich black rice to prepare cookies with tailored physicochemical properties.
