Effect of turmeric on the physicochemical characteristics of ‘Doenjang’ during fermentation

Abstract: In order to improve the quality of 'Doenjang', the effects of turmeric on its enzyme activity, microbial and physicochemical properties were investigated over a 12 week fermentation period.
