“…High methoxy citrus pectin (P90, 50 kDa) and ovalbumin (98%; 43 kDa) were purchased from Sigma‐Aldrich (Oakville, ON, Canada), whereas low methoxy citrus pectin (P29, 170 kDa) was kindly donated by CP Kelco (Atlanta, GA, USA).
