Effect of raspberry pomace extracts isolated by high pressure extraction on the quality and shelf‐life of beef burgers

Abstract: Summary Raspberry pomace extracts isolated with supercritical carbon dioxide (SCE) and pressurised ethanol/water (ETE) were tested in beef burgers. Only ETE additives effectively inhibited lipid oxidation and the growth of microorganisms, as it was observed by measuring the changes of thiobarbituric acid reactive substances, bacterial counts and the content of O2 and CO2 during storage in the modified atmosphere package. ETE additives also demonstrated some meat colour preservation effects, which were assessed… Show more

“…Raspberries, for example, is an important fruit containing valuable nutrients, while their pomace have stronger antioxidant and antimicrobial properties and are reported to contain higher concentrations of phenolics and ellagitannins than the pulp or whole fruit (Bobinaite, Vi _ skelis, Sarkinas, & Venskutonis, ). Raspberry pomace extracts were isolated through HPE and were successfully tested in beef burgers for increasing their shelf life as Raspberry pomace contains antimicrobial activity (Kryževičūtė, Jaime, Diez, Rovira, & Venskutonis, ). Grape pomace extracts have been observed to contain appreciable amounts of anthocyanins, which makes excellent ingredients for functional foods.…”
