Effect of Methodology on Total Volatile Basic Nitrogen (TVB‐N) Determination as an Index of Quality of Fresh Atlantic Cod (Gadus morhua)

Abstract: Six different published methods of determining TVB-N were evaluated for accuracy, precision, suitability as an index of quality, and both cost and speed of determination, using gutted Atlantic cod stored in ice for up to 18 days. Although the method of determination affected the actual values obtained, it did not affect the overaIl relationship between TVB-N and sensory assessment of raw or cooked fish. The method of determination also affected .precision and both cost and speed of determination. If high opera… Show more

“…Selection of appropriate method for accurate determination of TVB-N is important. Literature suggests that a number of methods for TVB-N determination have been proposed by many researchers (Miller et al, 1972;Keay and Hardy, 1972;Murray and Gibson, 1972;Gruger, 1972;Ritskes, 1975;Ruiter and Weseman, 1976;Ward et al, 1979;Parris, 1984;Bhotta et al, 1984).…”

“…In fish products, a number of spoilage indicators have been used; these include total volatile bases (TVB), trimethylamine (TMA) and biogenic amines (Botta et al, 1984a(Botta et al, , 1984bHebard et al, 1982;Mietz and Karmas, 1978). TVB and TMA are widely used to determine fish product quality.…”

“…In another study, Sahraei et al (2012) stated that the use of different levels of meat meal in broiler chicken diets decreased performance parameters. Botta et al (1984) reported that the addition of high-level PBPM to poultry diets containing 209 mg 100 g −1 TVN had a negative effect on broiler chickens; as a result, increasing losses and negative performance were observed. The negative effects of high levels of TVN in the diet on performance can be related to increased uric acid and toxic effects of uric acid in the broiler chickens (Javed et al, 1995).…”
