Effect of glycerol on the physicochemical properties of cereal starch films

Abstract: The physical properties of corn, wheat and rice starch edible films with different level of glycerol were evaluated. Starch films exhibited an apparent endothermic peak in the range of 151–199°C with corn starch film with 1.6% glycerol having a relatively lower To and higher Tp. X-ray diffraction spectroscopy indicated that the corn, wheat, rice starch powders had ~ 39–49% crystallinity, whereas Fourier transform infrared spectra showed peaks associated with the ti… Show more

“…This composition was chosen based on previous studies, [41] which resulted in homogeneous and flexible films. TPS/BSG composites (C) were prepared by adding different contents (1, 2.5, and 5 wt%) of BSG sifted with different sieves (35,60, and 100 mesh). The amount of deionized water was reduced in order to keep the final weight of the mixture at 100 g, as shown in Table 2.…”

“…The amount of deionized water was reduced in order to keep the final weight of the mixture at 100 g, as shown in Table 2. Composite samples were named according to the size of the sieve used (35,60, and 100 mesh) to prepare BSG and the content of BSG (1, 2.5, and 5 wt%) added to the composites.…”
