“…It is evident from the mean table that maximum total soluble solids was recorded in fruit stored for 12 days while the minimum total soluble solids was recorded in freshly harvested fruits. Khan et al (2010) reported that increase in the TSS of citrus fruits is mainly due to the breakdown of complex carbohydrates into sugar and low moisture content of the fruit (Bindu et al 2017) also found increase in total soluble solids (TSS) level in all three treatments from day 1 to day 5.On 5th day the total soluble solids ( TSS) was signi cantly higher than on 1st day, thus, genetic makeup of fruit plays major role in increasing total soluble solids (TSS) day by day. Further more rapid increase in TSS due to higher rate of cell metabolism which results reduction in total acidity by concerting different acids into sugars.…”
