This study aimed to evaluate the effects of simulated retail and home storage on the fatty acids, free amino acids and antioxidant activity in normal eggs and n-3 PUFA-enriched eggs. The proportion of PUFAs in n-3 PUFA-enriched eggs was higher than in normal eggs, and during storage, the proportion decreased from 24.40% to 21.92% and then increased to 25.86%, which may be due to lipid hydrolysis and oxidation. The proportion of total free amino acids significantly decreased during storage processing, but the changes observed during storage at 25ºC and 4ºC were not significantly different. Twenty four days of storage at 25ºC significantly reduced the total antioxidant capacity (T-AOC), and increased the thiobarbituric acid reactive substances (TBARS) values. Our results showed that the fatty acids and antioxidant activity in n-3 PUFA-enriched eggs are stable during storage at 4ºC for 24 d. Efecto del almacenamiento en huevos enriquecidos con AGPI [ácidos grasos poliinsaturados] n-3 RESUMEN Este estudio tuvo como objetivo evaluar los efectos del almacenamiento simulado, tanto minorista como doméstico, en los ácidos grasos, los aminoácidos libres y la actividad antioxidante de huevos normales y huevos enriquecidos con AGPI n-3. La proporción de AGPI en los huevos enriquecidos con AGPI n-3 fue mayor que en los huevos normales. Durante el almacenamiento dicha proporción disminuyó de 24,40% a 21,92% y luego aumentó a 25,86%, lo que puede responder a la hidrólisis y la oxidación de los lípidos. Aunque la proporción de aminoácidos libres totales se redujo drásticamente durante el almacenamiento, los cambios observados durante el mismo a 25ºC y 4ºC no fueron significativamente diferentes. Tras 24 días de almacenamiento a 25ºC se observó una importante reducción de la capacidad antioxidante total (T-AOC) y aumentaron los valores de sustancias reactivas al ácido tiobarbitúrico (TBARS). En conclusión, los resultados muestran que los ácidos grasos y la actividad antioxidante en los huevos enriquecidos con AGPI n-3 se mantienen estables durante el almacenamiento a 4ºC durante 24 días.

A b s t r a c tBackground: Linseed oil has cardio-protective effects. However, its antihypertensive action has not yet been well characterised. Aim:The primary purpose of the study was to evaluate the effect of short-term dietary supplementation with linseed oil on blood pressure (BP) and lipid metabolism in patients with mild hypercholesterolaemia. The secondary aim was to assess the effect of linseed oil on nitric oxide pathway and selected serum trace metals.Methods: 150 volunteers: 43 men (49.9 ± 11.5 years) and 107 women (53.2 ± 10.3 years), diagnosed with mild hypercholesterolaemia, were assessed prospectively for BP and lipid levels, before and after lipid-lowering diet plus linseed oil supplementation at a dose of 15 mL daily for four weeks (study groups) or four-weekly lipid-lowering diet (control group). Multivariate logistic regression analysis was used to determine the effect of linseed oil on BP after adjustment for age, sex, height, body weight, body mass index, smoking status, and alcohol consumption.Results: Supplementation with linseed oil significantly decreased low-density lipoprotein (LDL)-and non-high-density lipoprotein (HDL) cholesterol, and increased HDL-and HDL 3 -cholesterol levels. Additionally, linseed oil decreased diastolic BP in men (95% confidence interval [CI]: -6.0 to -1.1, p < 0.006), whereas in women linseed oil reduced (p < 0.001) systolic BP (-3.6 mmHg; 95% CI: -5.8 to -1.5) as well as diastolic BP (-4 mmHg; 95% CI: -5.8 to -2.1). Women with higher BP displayed an increase in serum L-arginine level (p < 0.01). In the logistic regression model oil consumption was associated with a decrease in mean BP (adjusted odds ratio 3.85; 95% CI 1.32-11.33). Conclusions:Our findings confirm the benefit of short-term linseed oil use in mild hypercholesterolaemia, particularly in patients with increased blood pressure.

In order to enhance lutein accumulation and to explain the reasons for the difference in lutein accumulation under photoautotrophic and heterotrophic conditions, different culture modes and the associated transcriptome profiles were investigated in Auxenochlorella protothecoides. The heterotrophic-photoautotrophic transition culture mode was investigated for lutein accumulation, changing from organic carbon to increase biomass in dark fermentation to irradiation under nitrogen rich conditions. This strategy increased the lutein content 10 times along with chloroplast regeneration and little biomass loss in 48 h. The highest lutein productivity and production in the heterotrophic-photoautotrophic transition culture reached 12.36 mg/L/day and 34.13 mg/L respectively within seven days. Furthermore, compared to the photoautotrophic conditions, most genes involved in lutein biosynthesis and photosystem generation were down-regulated during heterotrophic growth. By contrast, two β-ring hydroxylases were transiently upregulated, while violaxanthin de-epoxidase and zeaxanthin epoxidase were mostly downregulated, which explained the extremely low lutein content of heterotrophic cells. Nevertheless, the lutein proportion in total carotenoids reached nearly 100%. This study is the first to our knowledge to report on a comparative transcriptome analysis of lutein biosynthesis, and it provides a promising strategy to boost lutein production in A. protothecoides.
