Effect of Esca disease on the phenolic and sensory attributes of Cabernet Sauvignon grapes, musts and wines

Abstract: Background and Aims:The impact of Esca, a cryptogamic disease affecting woody tissues of grapevines (trunk, branches and shoots), was investigated on phenolic and sensory qualities of Cabernet Sauvignon grapes, derived musts and wines. Methods and Results: Global phenolic analyses revealed no major difference between healthy and affected grapes whereas high-performance liquid chromatography analyses showed decreases in the skin concentrations of catechin and epicatechin and of anthocyanins for the two vintages… Show more

“…The ESI‐MS detection was performed in negative ion mode or positive mode with the following optimised parameters: capillary temperature 400°C, capillary voltage −3 V, nebuliser gas flow 1.75 L min −1 , desolvation gas flow 1 L min −1 , and spray voltage 5 kV. Analysis were performed in negative mode for benzoic acids, hydroxycinnamic acid derivatives, flavonols and flavan‐3‐ols, positive mode for anthocyanins . The quantification of each compound identified was performed on each raisin sample collected.…”

“…From the plant side, more details have been unveiled, especially with regard to the plant physiological and molecular responses occurring in various organs. For instance, sensory attributes of musts and wine from esca symptomatic plants reveal a significant decrease in the product quality: biochemical analysis on berries display a decreased accumulation of catechins and anthocyanins coupled with an increase of minerals and acids content (Calzarano et al, 2008(Calzarano et al, , 2018Lorrain et al, 2012). In addition, diseased plants display an impaired water transport (caused by xylem dysfunction), which in turn leads to a considerable decline of leaf gas exchange and water use efficiency traits (Edwards et al, 2007;Pouzoulet et al, 2014).…”
