Effect of cooking on the proximate composition of seven accessions ofColocasia esculenta(L.) Schott tubers growing in South Africa

Abstract: Colocasia esculenta (L.) Schott (cocoyam) is cultivated mainly for its edible tubers. The effect of cooking the tubers on the proximate composition of seven accessions (UFCe1-UFCe7) of the crop growing in South Africa was investigated. When compared with the uncooked, the ash and crude fibre contents of the accessions significantly decreased after cooking. The moisture content, crude protein, crude lipid, carbohydrate and caloric contents increased with cooking in all the accessions, except UFCe1 and UFCe5 whe… Show more

“…This may be due to leaching of soluble minerals and damaging of cell wall of the plant cell resulting in leaching of not only the dissolved ones but also those dispersed in the solution. This result is in good agreement with the observation reported in literature [31]. Accordingly this may be due to water absorption during cooking leading to dilution and, hence, low amount of the ash.…”

“…The knowledge obtained from this study will be useful in elucidating the complete nutritional information of these tubers when combined with the results obtained from previous work on the proximate composition of these accessions (Lewu et al, 2009a).…”
