Effect of Chinese rice wine sludge on the production of Chinese steamed buns

Abstract: Chinese rice wine sludge (CRWS), analogous to beer yeast sludge, is the filter cake remaining after squeezing the fermentation mash of Chinese rice wine. CRWS contains high levels of protein (44.74%), nonstructural carbohydrates (37.33%), crude fiber (13.5%), and essential amino acids, which could enhance the trophic value of Chinese steamed buns. In our research, the microbiota of CRWS (mainly Saccharomyces cerevisiae and Lactobacillus sp.) was analyzed at the species level by single‐molecule real‐time DNA se… Show more

“…Marselan wine is made from Marselan variety of grape that is a cross between Cabernet Sauvignon and Grenache, where ethyl butanoate is found to be a key aroma compound with a concentration of 400 µg/L 43 . The concentration of ethyl butanoate in some other wines, where it is found as a key aroma compound, is as follows: Cabernet Franc wine 265.8 µg/L, 44 Cherry wine 393.0 µg/L, 45 and Chinese rice wine (Chinese Huangjiu) 424.3 µg/Kg 46,47 . Baijiu 2,48 is another Chinese famous wine containing many kinds of flavor esters such as ethyl acetate, ethyl hexanoate, and ethyl octanoate along with ethyl butanoate 49,50 …”

“…Before measuring, CSB samples were all cut into pieces (20 mm in height, 60 mm in diameter), and pre‐test speed, test speed, and post‐test speed were set at 1.0, 2.0, and 2.0 mm/s, respectively. Meanwhile, distance target was 10 mm and trigger was 5 g. Hardness, chewiness, springiness, resilience, and gumminess were determined in three replicates for each sample (Ai‐Lati et al., 2018).…”

“…The Chinese steamed bun also called baozi is a traditionally fermented wheat product originating from China, but it is consumed in many other countries in Asia. The bun has been a staple food for more than 2000 years [121], and is broadly classified into two types. The first needs starter dough for fermentation, just like sourdough, while the second type requires baker's yeast.…”
