Effect of batch infrared extraction pasteurizer (BIREP)‐based processing on the quality preservation of dried lime juice

Abstract: Infrared irradiation is an alternative method for the thermal processing of foods. Lime is one of the citrus fruits and considered beneficial for human health. Dried lime juice is common in the Middle Eastern region and alternatives are desired to the conventional resistance heating method for the elimination of undesirable microorganisms. A batch infrared extraction pasteurizer (BIREP) was developed to test both infrared and conventional heating methods. Dried lime juice was treated in the BIREP using combina… Show more

“…The antioxidant activity (AA) of terebinth was measured using the free radical scavenging capacity of DPPH (2,2-diphenyl-1-picrylhydrazyl), which was expressed as a percentage of inhibition [ 20 ]: AA [%] = ((A blank − A sample )/A blank ) × 100, …”

“…Infrared radiation is a form of an electromagnetic wave caused by thermal vibrations of molecules, and conversely, absorption of the waves causes thermal vibration of the molecules [ 20 ]. The high heat flux is an advantage of this type of dryer over hot air dryers.…”

“…On the day of experimentation, 500 g of black lime was crushed into a fine powder and allowed to pass through 40-mesh. The sieved black lime powder along with sugar (1550 g) and water (10,000 mL) was mixed in the reservoir of a juice pasteurizer equipped with infrared and conventional heating systems (Figure 1) [19]. The temperature and emission of infrared radiation (wavelength 6 μm) were monitored using the control panel of the reservoir.…”
