The decrease in vitamin C ( Table 4 ) observed in the juices with increase storage time could be as a result of the effect of oxidation reactions taking place during storage considering the unstable nature of Vitamin C ( Okorie et al., 2009 ). Despite the decrease in the vitamin C content, the juices stored at refrigeration temperature had higher values because the juice was more stable at the low temperature.…”
