Effect of agitated bed drying on the retention of phenolic compounds, anthocyanins and antioxidant activity of roselle (Hibiscus sabdariffaL.)

Abstract: Summary An agitated fluidised bed dryer was employed to dry lixiviated roselle (Hibiscus sabdariffa L.) calyxes. The effects of operational drying variables on the chemical attributes such as the retention of monomeric anthocyanins (MA), phenolic compounds, polymeric colour, antioxidant activity and drying rate were analysed. Drying curves showed only decreasing falling rate period. To determine the kinetic parameters, the drying data were fitted to a Page's model, based on the moisture content ratio vs. the d… Show more

“…To be appreciated, and for good economic return, hibiscus powder has to meet the best organoleptic quality, physicochemical (fines powder, low water activity), flowability, and reconstitutability properties (necessary to use powders), and mainly antioxidant activity. However, the biomolecule sensitivity remains challenging due to their degradation during the stabilization processing [ 12 , 13 , 14 , 15 ]. The biomolecule stability is therefore an important criterion for the preservation of the initial properties (antioxidant activity) of products to take advantage of the health benefits and nutritional quality of hibiscus.…”

“…The calyx of Hibiscus Sabdariffa is purplish red, which contains a lot of organic acids such as citric acid, hibiscic acid, reducing sugar, vitamin C, protein, natural pigment and minerals (Zhen et al, 2016). Some studies on the chemical constituents and pharmacological effects of Hibiscus Sabdariffa calyx show that Hibiscus Sabdariffa calyx has antioxidant, anti-tumor (Arenas et al, 2016), cardiovascular protection (Carvajal-Zarrabal et al, 2012), liver protection, antihypertensive (Dhar et al, 2015), diuretic and antilithiasis effect (Chen et al, 2020a).…”

“…Portanto, os tempos maiores propostos no PCC são indicados para aumentar a extração de compostos fenólicos, flavonoides e aumentar a atividade antioxidante. Entretanto, a análise do efeito quadrático desta variável sugere que a exposição prolongada a temperaturas elevadas favorece a degradação destes compostos (HUANG et al, 2016;ARENAS et al, 2016) SPIGNO et al, 2007).…”
