Penelitian ini bertujuan untuk mengkaji pengaruh penambahan tepung ampas kedelai terhadap mutu flakes dari tepung ubi jalar merah. Rancangan Acak Lengkap (RAL) digunakan dalam penelitian ini, dengan 6 perlakuan dan 3 ulangan. Perlakuan yang digunakan adalah penggunaan rasio tepung ubi jalar merah dan tepung ampas kedelai (w/w): UA0 (100:0%), UA1 ( 90:10%), UA2 (80:20%), UA3 (70:30%), dan UA4 (60:40%) dan UA5 (50:50%). Data yang diperoleh dianalisis secara statistik dengan menggunakan ANOVA dan diuji lanjut dengan DNMRT pada taraf 5%. Rasio penggunaan tepung ubi jalar merah dan tepung ampas kedelai berpengaruh nyata terhadap kadar air, abu, lemak, protein, serat kasar, ketahanan renyah flakes di dalam susu, dan uji sensori secara deskriptif dan hedonik (warna, aroma, tekstur dan rasa). Flakes terpilih adalah perlakuan UA2 (80:20%) yang memiliki kadar air, abu, lemak, protein, serat kasar 5,30%, 3,87%, 1,83%, 6,52%, dan 5,59%, sementara lama kerenyahan di dalam susu selama 163 detik. Hasil uji deskriptif UA2 adalah flakes berwarna orange kecoklatan, memiliki aroma ubi jalar, bertekstur agak renyah dan memiliki rasa ubi jalar merah. Selanjutnya hasil uji hedonik UA2 menunjukkan bahwa panelis menyukai flakes dari segi warna, aroma, tekstur dan rasa.

The activity of the cellulase enzyme and the content of phytoestrogen (genistein) forming is determined during the fermentation of soybean waste with Aspergullus niger. The analysis is performed at fermentation incubation time of 0, 48, 96, 144 and 192 hours and treatment with addition of micro nutrient (V2) and without micro nutrient (V1). Data analysis on cellulase enzyme activity on phytoestrogen forming material is performed using T test. The average of cellulase content of fermented soybean waste increases from 0.032-0.139 IU / ml (V1) and 0.061-0.158 IU / ml (V2) after 48 hours into 0.238 IU / ml (V1) and 0.245 IU / ml (V2) after 192 hours The average of genestein levels in the fermented soybean waste increases as well from 0.101 - 0.573 mg / g (V1) and 0.114 - 0.587 mg / g (V2) after 48 hours and increase into 0.722 mg / g (V1) and 0.699 mg / g (V2) after 192 hours. Statistical analysis indicates that the treatment of V1 and V2 has an effect on the increase of cellulase enzyme content and genistein level (P <0.05). The correlation between enzyme activity of cellulase and genistein on soybean waste fermented with Aspergillus niger is significant (R2 = 0,949). The relationship between the enzyme performance and its formation material is running synergistic, cellulase enzyme activity and genistein level experience significant increase during the fermentation process.

The aim of this research was to find out the effect of Aspergillus niger-fermented soybean residue in ration on the histomorphometry of the small intestine villi of local chickens (Gallus domesticus).This study used a completely randomized design. Nine female chicken aged 15-16 months were divided into three groups. Each group consisted of three chikens. All chicken were given 324-2 ration and water ad libitum. Group P1 (control group) was given 100 g ration each day, group P2 was given a combination of 85 g ration and 10 g unfermented soybean residue everyday whereas group P3 was given 85 g ration and 10 g Aspergillus niger-fermented soybean residue everyday. Treatment was performed for 30 days. On day 31, chickens were slaughtered and subsequently three parts of the small intestine that consists of duodenum, jejunum, and ileum were collected and fixed in 10% neutral buffered formaline (NBF) solution for histological preparation. To measure the surface area of three regions of intestine, all histological sections were stained with Masson’s trichrome Goldner's modification. Based on the statistical analysis, there was no difference in height of villi among three parts of small intestine (P0.05), but there were statistical different (P0,05) in ileum basal and duodenum apical width of three groups after supplementation with fermented soybean residue and non-fermented. Based on the results of this experiment, it could be conluded that supplementation non-fermentation and the fermentation of soybean residue with A. niger has no impact on the height of vili ileum, but it increase the width of vili ileum and apical vili duedenum intestin of local chickens. ____________________________________________________________________________________________________________________ Key words: chicken, soybean residue, fermentation, small intestine
