Physical/chemical compatibility is discussed as the primary factor in minimizing the reaction and interaction of components of the food with components of the packaging material. The key variables which determine the interaction are diffusion, partition, sorption and desorption constants. Examples are given for the migration and permeation of volatile and non-volatile compounds. An example shows the importance of considering the possibility of harmless components of the packaging material reacting to form organoleptic-active substances.

Fur Tensid/Alginat-Schaumlamellen wurde der Durchtritt von Methanoldampf an Hand der Permeations-, Diffusionsund Loslichkeitskoeffizienten in Abhangigkeit von der Zeit ermittelt. Stationare Transportzustande existieren nur in engen Zeitintervallen. Aus der Ubereinstimmung zm-ischen den berechneten und experimentell ermittelten Koeffizienten-Beziehungen wird auf eine Losungsdiffusion nach BARRER geschlossen. ZUSAMMENFASSUNG :Einfuhrend wird auf grundsktzliche Beziehungen zup Auswertung von Permeationsbestimmungen bei Kunststoff-Folien eingegangen. Nach einem systematischen uberblick uber bestehende Permeationsmeljverfahren werden zur Bestimmung der Permeation von organischen Flussigkeiten durch Folien drei spezielle Methoden mitgeteilt. Eine konduktometrische Methode ermoglicht die Erfassung von Substanzen, die in waBriger Losung Elektrolyte bilden, z. B. von aliphatischen Carbonsauren. Eine kapazitative Permcationsbestimmung zeichnet sich aus durch die Moglichkeit der Erfassung der Permeation von organischen Fliissigkeiten durch Hochpolymerfolien in Gegenwart eines Quellmittels. Einen universellen Anwendungsbereich besitzt eine MeBanordnung, die in Gaschromatographen anstelle von Kolonnen eingesetzt werden kann. SUMMARY:The principle evaluations of determinations of permeabilities through plastic films are discussed. After a systematic view of the general methods for determining permeabilities three special methods are described for measuring the permeabilities of organic fluids across plastic films and membranes. A conductometric method makes it possible to indicate substances giving electrolytes in aqueous solution, e. g. aliphatic carbonic acids. The permeation of an organic fluid across a plastic film in the presence of a second fluid can be measured by a special dielectric method. A universal application for determining permeabilities is given by a permeation cell, which can be brought into gaschromatographs instead of a column.
