Drivers of Palatability for Cats and Dogs—What It Means for Pet Food Development

Abstract: The pet food industry is an important sector of the pet care market that is growing rapidly. Whilst the number of new and innovative products continues to rise, research and development to assess product performance follows traditional palatability methodology. Pet food palatability research focuses on the amount of food consumed through use of one-bowl and two-bowl testing, but little understanding is given to why differences are observed, particularly at a fundamental ingredient level. This review will highl… Show more

“…Palatability is the major criterion generally used to evaluate product performance in the pet food market and is linked with pleasure perception or liking during consumption and seen as readily accepted by animals in brief [ 56 , 57 ]. The inclusion of different levels of BSFPs in the diets positively influenced the first sniff, the first bite, and the feed intake for dogs, especially the addition of 15% BSFPs in the diet, suggesting that BSFP is a palatable ingredient.…”

“…Palatability is a crucial criterion in diets and is generally used to evaluate the product performance and preference for cats, including first preference and feed intake [ 63 ]. The smell, moisture content, protein content and source, and processing ways are the main factors to determine the choice of cats [ 64 ].…”

“…This demonstrates that cats would accept each protein source tested here equally if presented separately. Nevertheless, there seems to be a limited understanding of the preferences that pets may have for certain species of meat over others [104]. This lack of knowledge may be attributed to factors such as the methodologies used to assess preferences, the manufacturing process of pet food, pet personal individuality, and previous experiences.…”
