The present study investigated cardiac oxidative status in diabetic Wistar rats exposed to ethanol extract of Cucumis sativus fruit. Male Wistar albino rats (n = 25, mean weight = 215 ± 15 g) were randomly assigned to five groups of 5 rats each: normal control, diabetic control, metformin, extract (200 mg/kg body weight, bwt) and extract (300 mg/kg bwt) groups. Diabetes mellitus was induced in the rats via intraperitoneal injection of 50 mg/kg bwt STZ. The diabetic rats were treated for 21 days with either metformin (50 mg/kg bwt) or the extract. Activities of antioxidant enzymes such as catalase, superoxide dismutase (SOD), glutathione peroxidase (GPx) and glutathione reductase (GR) as well as molecules like reduced glutathione (GSH), total protein (TP), malondialdehyde (MDA) and nitric oxide (NO) were measured in heart homogenate. The results showed that induction of diabetes mellitus with STZ significantly increased the fasting blood glucose (FBG) concentrations of the rats, while decreasing the activity/concentration of antioxidant enzymes/ molecules (p < 0.05). However, treatment of the diabetic Wistar rats with the extract markedly reduced the FBG concentration and body weights of rats, but enhanced the activity/concentration of antioxidant enzymes/molecules in cardiac tissue (p < 0.05). These results indicate that ethanol extract of the medicinal plant fruit has the potential to promote antioxidant defense in the heart of STZ-induced diabetic rats.

The employment of proteases directly from enzymes or indirectly from microorganisms during fermentation for the purpose of proteolysis of food proteins has been the conventional trend for the derivation of bioactive peptides from food matrices. However, recent studies have shown that inherent protease enzymes can be activated for this activity for vegetable foods using the sprouting process. The benefits of ease of operation, and reduced processing costs are formidable advantages for the optimal consideration of this technique. On another note, the demand for functional foods with therapeutic health effects has increased in recent years. Globally, plant foods are perceived as dietetic choices bearing sufficient quantities of concomitant nutraceuticals. In this manuscript, the sprouting route for the isolation of peptides and glucosinolates, and for the enhancement of total phenolic contents, polyunsaturated fatty acid profiles, and other bioactive constituents was explored. Advances regarding the phytochemical transformations in the course of sprouting, the therapeutic functionalities, and microbiological safety concerns of vegetable sprouts are delineated. In addition, consumption of vegetable sprouts has been shown to be more efficient in supplying nutraceutical components relative to their unsprouted counterparts. Biochemical mechanisms involving the inhibition of digestive enzymes such as α‐amylase, β‐glucosidase, and dipeptidyl peptidase IV (DPP‐IV), single electron transfer, and metal chelation, for impartation of health benefits, have been reported to occur from bioactive components isolated from vegetable sprouts. Practical applications Sprouting initiates proteolysis of vegetable proteins for the release of bioactive peptides. Abiotic stresses can be used as elicitors during the sprouting process to achieve enhanced phytochemical profiles of sprouts. Sprouting is a relatively more convenient approach to the improvement of the health benefits of vegetable foods. Vegetable sprouts are potential for the management of metabolic syndrome disorders.

As a fast-growing metabolic disorder diabetes mellitus is one of the leading causes of death worldwide. Nephropathy (damage to kidney leading to renal failure) is a microvascular complication of the disease. The aim of the present study was to assess renal function in diabetic rats treated with ethanol extract of Cucumis sativus fruit. Male Wistar rats (n = 25, mean weight = 215 ± 15 g) were randomly assigned to five groups (5 rats per group): control, diabetic, metformin, 200 mg/kg body weight (bwt) extract and 300 mg/kg bwt extract groups. Diabetes mellitus was induced in the rats via intraperitoneal injection of streptozotocin (STZ) at a dose of 50 mg/kg bwt. The diabetic rats were then treated for 21 days with metformin (50 mg/kg bwt) or the extract at doses of 200 and 300 mg/kg bwt, respectively, leaving the diabetic group untreated. The results showed that induction of diabetes mellitus using STZ significantly increased plasma urease activity, and urea and chloride concentrations, but it reduced the weight of rat kidney and concentrations of sodium, potassium and bicarbonate ions significantly (p < 0.05). However, treatment of the diabetic rats with the extract markedly reduced plasma urease, and urea and chloride ion concentrations, while increasing kidney weight, organ/body weight ratio as well as concentrations of sodium, potassium and bicarbonate ions (p < 0.05). The effect of the extract on potassium and chloride ions was dose-dependent. These results indicate that ethanol extract from the medicinal plant C. sativus fruit can ameliorate kidney dysfunction caused by STZ-induced diabetes mellitus.
